About this deal

These two beverages are quite different from ouzo, but they’re both diluted with water when served. As they are steeped for longer with a greater quantity of botanicals, they’re not clear and have a distinctive green or brown colour. In comparison, ouzo has a clean and crisp flavour. For a bit of dilution, stir the whiskey mix with a few small ice cubes, then strain into the rinsed glass. Blue, Anthony (2004). The Complete Book of Spirits. New York: HarperCollins. p.283. ISBN 0-06-054218-7. If you’re going traditional you need an absinthe fountain – look for vintage designs in antique shops in France – or you use a jug. Fill your glass with one part absinthe, place a slotted spoon with a sugar cube over the glass and slowly drip chilled water into the glass (about four times as much water to absinthe). Watch the green ‘smoke’ rise from the glass as the water mixes with the liqueur. Pernod and Pastis

So it’s a bit of a mystery why one way of saying “I’m in trouble,” in French is to declare “ Je suis dans le pastis.” I guess it’s more polite than other expressions that come to mind, but I suspect it may also be an oblique reference to the drink’s shady past. Pastis, it has to be admitted, has a very dodgy ancestry including a mad aunt by the name of absinthe. Known as the ‘Green Goddess’ or ‘la fé verte’ (green fairy) because of the green ‘smoke’ that rises from it when mixed with sugar and water, absinthe is also synonymous with the world of the arts. Degas’ ‘The Drinker’ is one of the artist’s iconic works and Van Gogh reputedly painted many of his pictures under the effects of absinthe. Technically, grain alcohol doesn’t contain any gluten as the protein is removed during distillation. However, people with celiac disease have experienced issues even with triple-distilled vodka. When I created this Himalayan Balsam Gin recipe, I had no idea of the surprise that was lying in wait for me. A magical colour-changing gin infusion!Leave to infuse in a cool, dark spot for 6-8 weeks, giving it a shake when you remember. It is advised not to leave the sloes macerating for longer than eight weeks in this particular infusion, or you may find your sloe and aniseed liqueur becomes bitter. You know how the dumpling is pretty much the great equalizer in the food world because nearly every culture seems to have its own version? The spirits world’s version of that is anise spirits. Once you start poking around, you realize there’s so much more than simply sambuca. In one four-week study, 72 women with hot flashes took either a placebo or a capsule containing 330 mg of anise seed three times daily. Those taking anise experienced a nearly 75% reduction in severity and frequency of hot flashes ( 12). Traditionally, ouzo is served in cafés called ouzeries alongside mezedes, which is similar to Spanish tapas that often consists of small seafood dishes. Most islands and coastal areas will serve ouzo alongside fish as its crisp flavour heightens the freshness.

But first: What is anise? Also called aniseed, it comes from the Pimpinella anisum plant, whose long, stalky stems produce white flowers where the seeds form. It’s one of the oldest known culinary herbs and, according to “The Oxford Companion to Food,” hails from the Levant (a historical term referring to what’s now Israel, Jordan, Lebanon, Palestine and Syria) and was a Roman-era darling in desserts and other dishes. Pliny the Elder was a fan of its digestive charms. Astani, A., Reichling, J., and Schnitzler, P. Screening for Antiviral Activities of Isolated Compounds from Essential Oils.
